“I was a long-time Pact Coffee subscriber... then I came across Sam at a market. The beans were miles ahead of the coffee I had been using. Needless to say I switched to Rise & Grind... Highly recommend Rise & Grind!

Brewing Legacy: Jairo Arcila’s Journey from Humble Farm to Coffee Innovation

The Incredible Journey of Jairo Arcila—A Third Generation Colombian Coffee Farmer

Jairo Arcila, a third-generation coffee grower from Quindío, Colombia, began his journey in 1987 with Finca La Esmeralda and his first Caturra lot. Balancing a full-time role as a mill manager with his passion for coffee, he honed his craft for over 40 years until retiring in 2019. His dedication led to the expansion of his holdings by five additional farms and created essential job opportunities during the harvest season.

Family Roots & Coffee Innovation: Jairo Arcila’s Legacy

Working alongside his wife, Luz Helena Salazar, and their two sons, Carlos and Felipe—who are now co-founders of Cofinet and specialists in specialty coffee—Jairo has elevated his coffee production to new heights. With guidance from his sons, he has refined the picking, sorting, and processing techniques across his farms, now producing exotic varieties like Pink Bourbon, Java, Papayo, and Gesha. Beyond coffee, Jairo's farms yield an array of other crops, and his day starts with a hearty breakfast complemented by his own exceptional brew, all while cherishing time with his family.

A Bit about the Producers

Washed Bourbon Papayo | Jairo Arcila, Santa Monica, Quindio

From the lush hills of Quindio, Colombia, comes an exceptional expression of craftsmanship and legacy. This rare Washed Bourbon Papayo is grown by Jairo Arcila, a third-generation coffee producer whose journey spans over four decades in Colombia’s coffee industry. Now retired from his role as Mill Manager at the country’s second-largest exporter, Jairo has turned his focus to cultivating extraordinary coffees on Finca Santa Monica, with the expert guidance of his sons, Carlos and Felipe Arcila.

Under their mentorship, Jairo has embraced meticulous picking, sorting, and processing techniques—refining his coffees to showcase exotic varietals like Pink Bourbon, Gesha, and the unique Papayo. The result? A cup that bursts with clarity, vibrancy, and elegance.

Expect a lively, tropical cup with bright notes of passionfruit and lime, rounded out by the smooth complexity of a crisp white grape acidity. Clean, juicy, and refreshingly distinct—this is a rare Colombian profile that celebrates innovation, heritage, and the fruits of true family collaboration.

Brew recommendation:
Roasted with filter brewing in mind—think V60, Kalita, or AeroPress—to highlight its sparkling acidity and layered fruit character. This lot also shows surprising versatility as a special espresso, offering a unique expression with high clarity and tropical sweetness.
